Did you know that the key to creamy, rich hummus is to use peeled chickpeas? Shout out to the innovative team at Melissa’s Produce! Their peeled and steamed chickpeas are a perfect choice. I used them right out of the package, and the hummus came together in minutes.
Here’s my recipe:
Garlicky Spicy Chickpea Hummus
Serves 4
1 pkg. (9 oz.) Melissa’s Peeled & Steamed Chickpeas
¼ cup extra-virgin olive oil, more for drizzling
3 cloves garlic, crushed
3 Tbs. fresh lemon juice
2 Tbs. tahini
Sea salt
2 Tbs. favorite harissa
1 tsp. minced fresh parsley
Add the chickpeas, olive oil, garlic, lemon juice, tahini, 2 Tbs. water, and ¾ tsp. salt to a food processor. Process until the mixture becomes a very smooth paste. Transfer to a medium bowl, top with harissa, a drizzle of olive oil, and the parsley.
